PEPPER STEAK 
1/2 lb. round steak, cut in strips
2 tbsp. oil
1 lg. onion, sliced and ringed
1/2 c. celery, chopped
1 or 2 green peppers, cut in strips
1 c. beef stock or canned broth
2 tbsp. cornstarch
2 tbsp. water
2 tsp. soy sauce

Brown steak quickly (about 3 minutes) in one teaspoon oil. Remove steak from pan. Add one tablespoon of oil, onions, celery, and peppers. Cook 10 minutes. Add broth and return steak to pan. Bring to boil. Thicken with cornstarch blended with water. Add soy sauce. Serve over cooked rice or noodles.
