RHUBARB CRISP 
Chop up 3 cups of rhubarb in small pieces and set aside.

Mix:

3/4 c. sugar
1 egg (well beaten)
2 tbsp. flour

Add rhubarb to mixture and spread in 8x8x2 ungreased baking dish. Sprinkle a little salt on top (if desired).

Mix:

3/4 c. flour
1 1/2 to 2 c. sugar (depending on tartness of rhubarb)
1 tsp. ground cinnamon

When well mixed, cut in 1/3 cup of butter until fine and crumbly. Sprinkle over rhubarb. Bake at 350 degrees for 45 minutes. Serves 6.
