FLOUNDER FLORENTINE 
2 (7 oz.) fresh flounder fillets
1 (10 oz.) pkg. frozen chopped spinach, thawed
1/2 c. Mozzarella cheese, shredded
1 tbsp. Parmesan cheese, grated
1/2 tsp. lemon juice
1/4 - 1/2 tsp. pepper
1/8 tsp. salt
1/8 tsp. oregano, crumbled
4 tsp. butter
2 tsp. Italian style bread crumbs

Preheat oven to 350 degrees. Grease shallow baking dish. Stir together spinach, Mozzarella, Parmesan, lemon juice, pepper, salt and oregano in medium size bowl. Halve each flounder fillet lengthwise. Spread filling over each, dividing equally. Roll up jelly roll fashion, secure with wooden toothpick. Arrange seam-side down in prepared dish. Dot each roll with 1 teaspoon butter. Sprinkle with bread crumbs if desired. Bake covered for 20 minutes or until fish in center of roll just begins to flake when touched with fork and filling is hot. Transfer to serving plates. Remove toothpicks.
