8-inch unbaked pastry shell 5 slices bacon 2 tbsp. finely chopped onion 1 c. shredded Swiss or Cheddar cheese 4 eggs, slightly beaten 1 can cream of mushroom soup 1/4 tsp. nutmeg 1/4 tsp. pepper Preheat oven to 350 degrees. Cook bacon until crisp, drain, and crumble. Pour off all but 2 tablespoons bacon fat and cook onion in bacon fat until tender. Sprinkle bacon, onion and cheese into pie shell. Mix together eggs, soup, nutmeg and pepper and pour over bacon and cheese. Bake in preheated oven 35-40 minutes or until the tip of a knife inserted in center comes out clean. Let cool 3 minutes before serving. Serves 4. |
