CHILIES RELLENOS BAKE 
1 lb. hamburger
1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
2 (4 oz.) cans whole green chilies (cut in half lengthwise & seeded)
1 1/2 c. shredded Cheddar cheese
4 beaten eggs
1 1/2 c. milk
1/4 c. flour
1/2 tsp. salt
Several dashes hot pepper sauce
Dash pepper

In skillet, brown hamburger and onion; drain off fat. Sprinkle meat with 1/2 teaspoon salt and 1/4 teaspoon pepper. Place 1 (4 ounce) can chilies, cut in half crosswise and seeded. In 10 x 6 x 1 1/2 inch baking dish; sprinkle with 1 1/2 cups shredded Cheddar cheese; top with meat.

Arrange 1 (4 ounce) can chilies, cut in half crosswise and seeded over meat. Combine 4 beaten eggs, 1 1/2 cups milk, 1/4 cup flour, 1/2 teaspoon salt, several dashes hot pepper sauce and dash pepper; beat until smooth. Pour over chili mixture.

Bake in moderate oven (350 degrees) for 45-50 minutes or until knife inserted just off center comes out clean. Let cool 5 minutes; cut in squares to serve. Serves 6.
