OKRA GUMBO 
2 lg. pkgs. frozen cut up okra
1/2 sm. can tomato sauce
Vinegar
1 pkg. smoked sausage
1/2 lb. ham chunks, cut up
1 med. onion, diced
1 Bell pepper (green)
Parsley - Kitchen Bouquet
1 (3 lb.) chicken, cut up
3 c. cooked rice

Place frozen okra in Dutch oven with enough oil to fry until okra has melted. Take cover off and add tomato sauce and a few drops of vinegar. Brown so okra will not be green. Add next 5 ingredients and continue cooking, about 4 to 10 minutes. Add 4 cups of hot water and bring mixture to a boil. Add 2 large tablespoons of Roux. Add 2 tablespoons of Kitchen Bouquet and chicken. Cook until done. Serve over rice. Yield: 6 to 8 servings.

ROUX: Heat 1/2 cup of oil and stir in 1/2 cup of flour. Continue stirring until mixture turns caramel color, approximately 15 to 20 minutes.
