VEGETABLE CASSEROLE 
1 lb. carrots, sliced and cooked
2 boxes broccoli, partially cooked and drained
2 boxes cauliflower, partially cooked and drained
1 1/2 stacks Ritz crackers, smashed
1 stick melted butter
2 c. cubed Velveeta

Toss in a large bowl and put in buttered casserole. Save some crumbs for top. Bake at 350 degrees for 20 minutes. Serves 8.
