VEGETABLE CASSEROLE 
1 (16 oz.) frozen mixed vegetables (broccoli, carrots, cauliflower)
3/4 chopped onion (cooked with vegetables as per pkg. directions)
1 c. grated cheddar cheese
1 can water chestnuts, sliced
1 c. mayonnaise
Salt & pepper
1 c. Ritz crackers
1/2 stick butter

Cook vegetables and onions as directed on vegetable package. Cool. Add cheese, water chestnuts, mayonnaise, salt and pepper. Place in buttered casserole. Cover with 1 cup crushed Ritz crackers mixed with 1/2 stick melted butter. Bake at 350 degrees for 30 minutes.
