VEGETABLE CASSEROLE 
2 lg. pkgs. California vegetables (broccoli, cauliflower, carrots)
1 lb. Velveeta cheese, cubed
1 tube Ritz crackers, coarsely crushed
1 stick butter

Cook vegetables, drain. Melt butter, stir in crackers. Grease a 3 quart casserole and put vegetables in. Place cube cheese on top of vegetables, then sprinkle cracker mixture on top of cheese. Bake in 350 degree oven for 20 minutes or until cheese melts.
