Steam 8 to 10 cut squash 10 to 15 minutes in a little water with 3 medium chopped onions, 1/4 finely chopped bell pepper and salt and pepper to taste. Drain and add 1/2 cup butter and 1 tablespoon bacon drippings. Mash well. Add 1 1/2 teaspoons sugar. Add 6 saltine crackers; mash well. Beat 1/2 cup milk and egg together. Pour into squash; blend well. Add 1/2 cup grated cheese on top. Put in greased casserole dish. Dot with butter on top. Crumble crushed crackers. Bake at 300 degrees for 35 minutes, 10 minutes at 325 degrees. Cool 5 minutes.
