CHOCOLATE STREUSEL PECAN MUFFINS 
MUFFIN:

1 1/4 c. milk chocolate chips, divided
2 tbsp. sugar
1/2 tsp. cinnamon
1 egg
1/2 tsp. vanilla
3 tbsp. butter
1 c. flour
2 tsp. baking powder
3/4 c. chopped pecans
1/3 c. buttermilk or sour milk

Combine over hot water (not boiling) 3/4 cup chips and butter. Stir until smooth. Combine flour, sugar, baking powder, cinnamon, the 1/2 cup of remaining chips and pecans. Make well in center.

In a bowl combine egg, buttermilk and vanilla and melted chips. Add to flour mixture. Stir only until dry ingredients are just moistened. Spoon into paper lined muffin cups. Fill 2/3 full. Sprinkle each with topping.

TOPPING:

1/4 c. flour
1/2 tsp. cinnamon
1/4 c. chopped pecans
1/4 c. brown sugar
2 tbsp. melted butter

Combine flour, sugar, cinnamon and melted butter, stir with fork to coarse crumbs. Add nuts.

Bake 20 to 25 minutes in a preheated 375 degree preheated oven. Makes 12 muffins.
