GRITS AU GRATIN 
3/4 c. quick-cooking grits
3 c. boiling water
6 tbsp. butter
12 oz. process cheese, cubed
2 eggs, well beaten

Stir grits gradually into salted boiling water. Return to boil and reduce heat. Cook 3 to 5 minutes, stirring occasionally. Add butter and cheese; stir until melted. Add eggs, mix well. Pour into greased 2 quart casserole. Bake at 350 degrees for 45 minutes. Serves 8.
