HAM AND SPINACH ROLLS 
24 thin slices boiled ham
2 (10 oz.) pkgs. frozen spinach, thawed and drained well
2 c. corn bread stuffing mix
2 c. sour cream
1/2 med. onion, chopped fine
Salt and pepper to taste

Combine spinach, stuffing, sour cream, onion, salt and pepper. Spread on ham and roll up. Place seam side down in baking dish.

8 tbsp. flour
8 tbsp. butter
2 c. milk
2 c. chicken broth
1 c. grated Cheddar cheese
Paprika and Parmesan cheese for garnish

Melt butter in saucepan. Add flour and blend well. Add milk and chicken broth and continue stirring over medium-high heat until thick. Season to taste. Add Cheddar cheese and remove from heat. Stir until cheese is melted. Pour over ham. Sprinkle with paprika and Parmesan cheese. Bake at 350 degrees for 15 minutes, covered, then another 15 minutes, uncovered.
