BEET SALAD 
1 can beets
1/4 c. chopped dill pickles
1/4 c. chopped olives, optional
1/4 c. chopped onions
1/4 to 1/2 c. Italian dressing
4 to 5 leaves of lettuce, hand shred

Place first 5 ingredients into covered salad bowl to marinate. Put in refrigerator to chill (30 to 60 minutes). When ready to serve, add shredded lettuce.
