SICILIAN MEAT LOAF 
2 beaten eggs
1/2 c. tomato juice
2 tbsp. snipped parsley
1 clove garlic, minced
2 lb. ground beef
8 thin slices boiled ham
6 oz. mozzarella cheese, shredded (1 1/2 c.)
3 slices mozzarella cheese, halved diagonally
3/4 c. soft bread crumbs
1/2 tsp. oregano
1/4 tsp. salt & pepper

Combine eggs and next 6 ingredients. Add beef and mix well. On wax paper or foil pat meat into a 12 x 10 inch rectangle. Arrange ham on top of meat, leaving a small margin around edges. Sprinkle shredded cheese over ham. Starting from short end, roll up meat, using paper to lift. Seal edges and ends.

Place roll, seam side down, in pan.

Bake at 350°F until done, about 1 1/2 hours. Place cheese wedges over top of roll. Return to oven about 5-10 minutes to melt cheese.
