VEGETABLE RICE CASSEROLE 
1/2 c. green onion (include top) sliced
1 tbsp. butter
1 (3 oz.) can mushrooms
1/4 c. pimientos, chopped
1 c. cooked rice
1 1/2 c. chicken broth
1/2 tsp. pepper

Cook onion in butter over medium heat until soft. Add remaining ingredients, except rice. Bring to boil. Put rice in greased casserole. Pour liquid mixture on top. Stir well. Cover and bake in preheated oven at 375 degrees for 30 minutes. Serve 4. 135 calories each serving.
