SWEET FRENCH BUNS | |
1 cake Fleischmanns yeast 1 c. milk scalded and cooled 1/4 c. lukewarm water 1 tbsp. sugar 4 c. sifted flour 1/4 c. sugar 3 tbsp. butter 1 egg 1/2 tsp. lemon extract 1 tsp. salt Dissolve yeast and one tablespoon sugar in lukewarm liquid. Add enough flour to make in ordinary sponge (about 1 1/2 cups). Beat until perfectly smooth. Cover and set aside in warm place to rise for 50 minutes or until light. Add sugar and butter creamed, egg beaten, lemon extract, and about 2 1/2 cups flour for a soft dough, salt last. Knead until smooth, cover and rise to double in bulk, about 1 hour. Bake in hot oven 15 minutes (shape in clover leaf or any fancy twist.) |
