SPICED PEARS 
7 lb. hard pears
1 pt. vinegar
1/2 lemon rind
1/4 oz. whole allspice
3 1/2 lb. sugar
1 oz. ginger root
1/2 oz. whole cloves
2 oz. stick cinnamon

Wash and drain fruit. Pare and cut pears in halves or quarters, remove seed. Make a syrup of vinegar and sugar; add spice bag. Bring to a boil; add pears and lemon rind; return to a boil. Cool quickly and allow to stand overnight.

Next morning drain off the syrup from the pears into a porcelain or enamel vessel, heat to boiling, pour over pears and allow to stand overnight.

Next day drain and heat the syrup as before; repeat this 4 or 5 days, then boil the syrup down until it is just enough to cover the fruit. Add the fruit to the hot syrup and boil 30 minutes. Pack into hot jars, leaving 1/2 inch head space. Process in boiling water bath for 5 minutes.

Note: The pears may be finished in one day by boiling them in syrup until the fruit is tender and clear. Remove the fruit and boil down the syrup. Add fruit, reheat and finish as above. The fruit is less rich if done this way.
