CAULIFLOWER LATKES 
1 head cooked cauliflower, drained
1 egg
1/2-3/4 c. matzah meal
Salt and pepper to taste
Oil
Pinch of baking powder (optional)

Cook cauliflower in water until soft. Mash, add remaining ingredients except oil. Heat oil in frying pan and drop mixture into hot oil by spoonfuls. Brown on both sides. Variation: you can add 1 medium raw grated potato.
