TRADITIONAL POTATO LATKES 
5 med. potatoes
1 onion
2 eggs
1/2 c. flour
1 tsp. salt
Oil for frying

Peel and grate potatoes and onion. Mix the two together in a large bowl and add 2 slightly beaten eggs, flour and salt. Stir to make a smooth batter that will drop heavily from a spoon. Brown on both sides and drain on paper towels. Can also be poured into a greased shallow baking pan and baked at 350 degrees for 45 minutes. Cut into squares and serve with sour cream or applesauce.
