MUSHROOM STUFFED SOLE 
1 tbsp. vegetable oil
1 sm. onion, chopped
1/2 lb. mushrooms, sliced
1 c. plain or Italian style bread crumbs
1 tbsp. fresh chopped or 1 tsp. dried basil
1 tbsp. lemon juice
1 tsp. white wine or Worcestershire sauce
1/2 tsp. salt
1/8 tsp. pepper
4 sole or flounder fillets (about 1 lb.)
1 sm. tomato, chopped

Preheat broiler. In an 8 x 8 inch glass baking dish, combine oil, onion and mushrooms. Cover with vented plastic wrap. Place in microwave and cook on high 3-5 minutes until onions are translucent and mushrooms are tender. Stir in bread crumbs, basil, lemon juice, white wine or Worcestershire sauce, salt and pepper. Place fish on broiling rack fit in broiling pan. Top fillets with mushroom mixture and chopped tomatoes. Broil 5 minutes, until fish flakes when pierced with a fork.

Since microwave ovens vary in power, you may need to adjust your cooking time.
