COCONUT MACAROONS 
1 1/3 c. coconut
1/3 c. sugar
2 tbsp. flour
1/8 tsp. salt
2 egg whites
1/2 tsp. almond extract

Combine sugar, flour, coconut, and salt. Stir in unbeaten egg whites and extract. Mix well. Drop by teaspoons onto greased and floured baking sheet. Bake at 325 degrees for 20 minutes or until edges are browned lightly. Remove from cookie sheet at once. Store in airtight container. Yield: 1 1/2 dozen.
