PORK ROAST HOT DISH 
3 c. meat, cubed
3 1/2 c. cooked rice (brown or white)
3/4 to 1 c. onion
1 c. celery
1/2 c. green pepper
3 tbsp. melted butter
1 can cream of mushroom soup
1/2 c. juice from roast
1 jar mushrooms, undrained
1/2 tsp. salt
1/4 tsp. thyme leaves
1/4 tsp. sage
1 jar pimentos, cut up

Mix all together. Put seasoned croutons on top. Bake 45 minutes to 1 hour at 350 degrees. Simply mouth-watering!
