COCONUT PIE WITHOUT A CRUST 
2 c. milk
3/4 c. sugar
1/2 c. biscuit mix
4 eggs
1/4 c. butter
1 1/2 tsp. vanilla
1 c. flaked coconut

Combine milk, sugar, biscuit mix, eggs, butter, and vanilla in electric blender container. Cover and blend on low speed for 3 minutes. Pour into greased 9 inch pie plate. Let stand about 5 minutes. Then sprinkle coconut over pie.

Bake at 350 degrees for 40 minutes. Serve warm or cold. When you cut this pie you will be surprised to see it has made its own crust. You can also use your electric mixer to make this pie. It can also be made by hand but you must beat and beat and then beat some more to get the same effect as the electric mixer. Nothing will take the place of the blender.
