EGGPLANT CASSEROLE | |
1 1/2 lb. eggplant, cut into slices 1 med. onion, chopped 1 med. green pepper, chopped 1 can tomato soup 1/4 c. water 1 1/2 c. grated cheese Fry eggplant until brown (I parboil mine instead). Add rest of ingredients. Bake at 350 degrees for 45 minutes. Add buttered bread crumbs halfway through cooking. I use 4 slices of bread cut in little pieces. |
