8 new potatoes
4 scallions, peeled & chopped
6 tbsp. mayonnaise
Dash of pepper
Sprinkle of parsley
2 cucumbers, cubed

Boil potatoes in skins, until soft. Drain. Chop into large pieces. Add scallions and cucumbers. Add mayonnaise; stir, cover and refrigerate. When ready to serve, sprinkle with pepper and parsley.
