ARTICHOKE-SPINACH CASSEROLE 
4 (10 oz.) pkgs. frozen chopped spinach
2 (8 oz.) pkg. cream cheese
3/4 c. butter
2 (15 oz.) cans artichoke hearts, drained
Crushed Ritz crackers
Grated Parmesan cheese

Preheat oven to 350 degrees. Cook spinach according to package directions. Drain. Place in buttered 3 quart casserole. In top of double boiler, melt butter and cream cheese. Spread mixture over spinach. Arrange artichoke hearts over cheese mixture. Top generously with cracker crumbs and Parmesan cheese. Bake at 350 degrees until bubbly, approximately 25 minutes. May be assembled in advance. Reserve crumbs and cheese until ready to bake. Yield: 12 servings.
