FRUIT COCKTAIL DESSERT CAKE 
1/2 c. flour
1 tsp. baking soda
Pinch of salt (optional)
1 c. brown sugar
3/4 c. oats (1 minute or old fashioned)
1 beaten egg or 1/4 c. Egg Beaters
1 (15 oz. or 1 lb.) can lite fruit cocktail, juice and all

Sift together flour, baking soda, and salt. Add rest of ingredients. Mix all ingredients in ungreased 8 x 8 inch or 9 x 9 inch square pan. Spread evenly. Combine 1/2 cup brown sugar and 1/2 cup chopped nuts; sprinkle over top of mixture in pan. Bake at 325 degrees for 45 minutes. Serve with ice cream, whipped cream, non-fat frozen yogurt or lite whipped topping.
