SPANISH RICE WITH BEEF 
3 tbsp. vegetable oil
1/2 lb. ground beef
1 c. chopped onion
1 c. chopped green pepper
2 c. canned tomatoes
2 c. cooked rice
1 tsp. salt
1/4 tsp. pepper

Place oil in skillet, and heat until hot but not smoking. Add beef, cook over low heat until brown, and remove from skillet. Place onion and green pepper in skillet, and cook until onion is hot but not brown. Return beef to skillet, and add tomatoes, rice, salt and pepper. Cook over low heat for 25 minutes. NOTE: Spanish rice may be baked in casserole in moderate oven (350 degrees) for 30 minutes, if desired.
