ARTICHOKE SALAD 
1 pkg. UNCLE BEN'S® chicken flavored rice
2 (6 oz.) jars marinated artichoke hearts
1 tbsp. grated onion
3 rings green pepper, chopped fine
10 pimiento stuffed olives, sliced
3/4 tsp. curry powder
1/3 scant c. mayonnaise

Cook rice by package directions but leave out butter. Cool. Strain artichokes, save marinate. Cut artichokes into bite size pieces and set aside. To cooled rice, add onion, green pepper and olives. Mix half of marinate with mayonnaise and curry powder. Add to rice. Fold in artichokes. Mix well and cover. Refrigerate overnight before using. Keeps well in refrigerator for several weeks.
