ARTICHOKE SALAD 
1 pkg. chicken flavored rice mix
2 jars marinated artichoke hearts, cut in half
4-6 green onions, thinly sliced
1/2 green pepper, seeded and chopped
10 stuffed olives, thinly sliced
12 black olives, thinly sliced
2 tbsp. chopped pimiento

Cook rice mix according to directions but omit butter. Cool. (I use Lipton.) Drain the artichoke hearts and save the marinade. Add the next 5 ingredients to the rice. Add the artichokes, toss with rice mixture.

Add dressing made from 1/3 cup mayonnaise mixed with artichoke marinade. If you like curry, add 3/4 teaspoon curry powder. Mix all ingredients and toss lightly. Refrigerate overnight for better flavor.
