CANADIAN BACON AND SWEET
POTATOES
 
1 lb. cooked sweet potatoes
2/3 c. brown sugar
1/4 tsp. salt
1/8 tsp. cinnamon
1/2 lb. Canadian-style bacon
18 halves sliced pineapple
2 tbsp. butter
1/4 c. pineapple juice

Slice potatoes lengthwise and arrange in a greased dish. Sprinkle with brown sugar, salt and cinnamon. Alternate thinly sliced bacon and pineapple on top of potatoes. Pour on pineapple juice. Dot top with butter. Bake about 45 minutes at 325 degrees.
