COCONUT FILLING 
2 egg whites
2 c. sugar
3/4 stick butter
3/4 c. water
1 tsp. vanilla
2 pkgs. frozen coconut

Beat egg whites until foamy. Add sugar, butter, water, vanilla and frozen coconut. Cook 3 to 4 minutes after it comes to a boil. Will fill 3 to 4 layers. This doesn't set like some fillings, it soaks in your layers, but it is really good.
