SWEET POTATO SALAD 
2 c. grated raw sweet potato (for those who cannot tolerate raw sweet potato, steam or boil potatoes in their skins until barely tender, peel, cool and grate)
2 c. finely chopped green peppers
1 c. finely ground peanuts, pecans, cashews or almonds
2 tbsp. (approximately) homemade mayonnaise (see below)
Salad greens
1/2 c. diced cucumber

1. Combine the sweet potato, green peppers and nuts in a bowl. Stir in the mayonnaise to barely moisten, or to taste.

2. Spoon onto a bed of salad greens. Garnish with the cucumber. Yield: 8 servings.
