SWEET SOUTHERN POTATO SALAD (WITH HOMEMADE DRESSSING) | |
This is a sweet Southern style potato salad. The salad dressing is the key to making this recipe taste good! 6 large potatoes 2 hard boiled eggs 6 strips fried bacon, cut up into small pieces SALAD DRESSING: 1 cup mayonnaise (Hellmann's or Best Foods) 1 cup Miracle Whip 1 1/2 tsp. vinegar 1 tsp. prepared mustard (or less; for coloring) 2/3 cup sugar (actually use just a little bit less!) Boil 6 large potatoes until cooked through and then cool and peal skin. Cut into small cubes. Boil eggs and cut into small pieces and then set aside. Cook bacon in pan and then cut into small pieces. Set aside. Combine equal amounts of mayonnaise and Miracle Whip salad dressing. Then add mustard, mostly for a light off-white coloring. Add vinegar. Add sugar, but use a little less than 2/3rds of a cup. Note: Taste salad dressing and if it is too sweet, add just a little more vinegar. If it is too tart, add a little more sugar. This dressing requires a lot of sugar and the right taste is sweet and a little tart at the same time. Add bacon bits and chopped hard boiled eggs to the salad dressing.
