SHRIMP CHOWDER | |
1/4 c. butter 4 onions, sliced 1 c. boiling water 6 potatoes, cubed 1 tsp. salt 1/2 tsp. pepper 1 1/2 qts. milk 2 c. grated cheese (sharp) 2 lbs. raw shelled, deveined shrimp 3 tbsp. parsley 1. Saute onions in butter in Dutch oven. Add boiling water, potatoes, salt and pepper. Simmer, covered, 20 minutes - do not drain. 2. Heat milk with sharp cheese until cheese melts - do not boil. 3. Add shrimp to potatoes and cook until they turn pink - 3 minutes. Add hot milk and cheese mixture. Heat - do not boil; sprinkle with parsley. Serves 8. |
