SKILLET PORK CHOPS AND ONIONS 
4 thin cut pork chops
1 tbsp. oil
2 med. onions, sliced lengthwise
1 clove garlic, crushed
1/2 c. beef broth
1 tbsp. soy sauce
1 tsp. each ginger and brown sugar

In large skillet, brown chops in oil; remove and set aside. In same skillet saute onions and garlic until lightly browned. Return chops to skillet; add mixture of broth, soy sauce, ginger and sugar. Cover and cook over low heat 20 to 25 minutes or until chops are fork tender. If desired, thicken pan liquid. Serve chops topped with onions and pan liquid. 4 servings.

My family likes the onions and sauce in this recipe so much, I make a half-batch more. Quick and easy week-night meal. I use any cut of pork chop and I never seem to have to thicken the liquid; I just leave off the cover for about five minutes or until it's the consistency we like.

Reading this recipe - I know what I will fix for supper this evening. Only change will be Coconut liquid aminos for the Soy Sauce (now used as a sub for Soy - due to the high sodium level). Can hardly wait. Know this will be delicious!
