ZUCCHINI - CHOCOLATE CHIP COOKIES | |
1/2 cup (1 stick) butter 1 cup brown sugar 1 egg 1 tsp. vanilla 1 1/2 cups all-purpose flour 1/4 tsp. salt 1/2 tsp. baking soda 3/4 cup oatmeal 1/2 cup coconut flakes 1 (6 oz. pkg.) chocolate chips 1/2 cup chopped nuts 1 cup zucchini, shredded Beat butter, sugar, egg and vanilla. Add all dry ingredients and oatmeal; mix until smooth. Add coconut flakes, chocolate chips, chopped nuts and shredded zucchini; mix well. Drop by spoonfuls (same as chocolate chip cookies) on greased cookie sheet. Bake at 350°F for 10 minutes. |
