MOTHER'S GRAHAM BREAD | |
1 qt. milk, scalded (or equal dry milk + water) 2/3 c. shortening 1/3 c. dark molasses 2 tbsp. salt 1/2 c. sugar 2 pkgs. yeast 4 c. whole wheat flour 1 c. dry oatmeal 7 c. white flour (may substitute some cornmeal or bran for 2 c. white) Dissolve yeast in warm, not hot, milk. Add molasses, sugar, salt and whole wheat flour. Add softened shortening, rest of flours and knead as any yeast bread. Let rise until double, mix down. Let rise 1/2 hour then put in 5 bread pans. Let rise until double and bake 45 minutes at 375 degrees. It is good to rub a stick of butter over tops of warm loaves. |
