MISSISSIPPI CAVIAR 
3 cans black-eyed peas
3/4 c. onion
3/4 c. jalapeno peppers
3/4 c. green pepper
1 1/2 tsp. garlic, minced
1 bottle Zesty Italian dressing
1/4 c. pimiento, chopped

Drain peas. Chop remaining vegetables and add to peas. Pour dressing over mixture and allow to marinate for several hours. Drain dressing from vegetables, if desired, and serve with Doritos or Tortilla chips.
