MISSISSIPPI CAVIAR 
3 cans black-eyed peas, drained
1 c. diced green peppers
3/4 c. onion, diced
3/4 c. jalapeno pepper
1 1/2 tsp. minced garlic
1/4 c. diced pimento
8 oz. bottle Italian dressing

Mix together. Chill overnight, drain before serving. Serve with tortilla chips.
