SPINACH QUICHE 
10 oz. frozen spinach
3/4 lb. cheddar cheese
2 tbsp. oil
6 eggs
2 sm. onions, finely chopped
1/2 c. sour cream
1 can mushroom soup

Saute onion in oil. Cook spinach. Add to onion. Saute until all moisture is gone. Beat eggs. Grate cheese. Stir all together and put into 9 inch pie pan. Bake at 350 degrees for approximately 45 to 55 minutes.
