BOSTON BAKED BEANS 
2 lb. California Pea Beans or Navy Beans
1 tsp. Baking soda
1 lb. Salt Pork
1 medium Onion, peeled
8 tbsp. Sugar
2/3 c. Molasses
2 tsp. Dry Mustard
4 tsp. Salt
1/2 tsp. Pepper
6-1/2 c. Warm Water

Soak the beans overnight. In the morning, parboil them for 10 minutes with the Baking Soda. Drain in a colander and rinse with cold water.

Dice the Salt Pork into 1/2 inch squares. Put half of the Salt Pork at the bottom of a 2 quart bean pot, along with the whole Onion. Put the Beans in the pot. Top with the rest of the pork. Mix the Sugar, Molasses, Mustard, Salt, and Pepper together with the Warm Water and pour over the beans.

Bake in a 300°F oven for 4-1/2 to 5-1/2 hours. Add water as necessary to keep the beans moist. (Be careful not to flood the beans).

Serves 10.
