COUNTRY - STYLE CHICKEN KIEV | |
2/3 c. butter 1/2 c. fine dry bread crumbs 2 tbsp. grated Parmesan cheese 1 tsp. basil 1 tsp. oregano leaves 1/2 tsp. garlic salt 1/4 tsp. salt 2 chicken breasts, split (about 1 1/2 lbs.) 1/4 c. white wine or apple juice 1/4 c. onion, chopped 1/8 c. parsley, flaked Heat oven to 375 degrees. Melt butter. Combine bread crumbs, Parmesan cheese, basil, oregano, garlic salt and salt. Dip chicken breasts in melted butter, then coat with crumb mixture. Reserve the remaining butter. Place chicken (skin side up) or skinless in ungreased pan. Bake for 50 to 60 minuts or until tender. Meanwhile, add wine, onion and parsley to reserved butter. When chicken is golden brown, pour butter sauce over chicken. Continue baking for 3 to 5 minutes or until sauce i heated through. Serve with sauce spooned over dish. Serves 4. |
