TROPICAL STORM CAKE | |
2 lg. bananas (pureed) 4 eggs 1 1/2 c. sugar 1 c. oil 1/4 c. orange juice 1 tsp. coconut extract 3 c. flour 1 1/2 tsp. baking soda 1 1/2 tsp. baking powder 1 1/2 tsp. cinnamon 1/2 tsp. salt 8 oz. chopped dates 1 1/2 c. chopped nuts 1 c. flaked coconut 1 c. nuts (halved) Beat eggs. Add sugar and oil; beat for 1 minute. Add pureed bananas, orange juice and coconut extract; beat 1 minute. Combine dry ingredients; beat into banana mixture until smooth. Stir in dates, nuts and flaked coconut. Grease 10 inch tube pan, place halved nuts in bottom of pan; pour batter over nuts. Bake 60-65 minutes. Cool 20 minutes. Loosen cake with spatula, turn out on cooling rack. |
