STEAMED SWEET-SOUR RED CABBAGE 
8 c. cabbage, finely shredded
1 lg. tart apple
1 lg. onion, chopped fine
1 tbsp. vegetable oil
1/3 c. sugar
1 c. water
1/3 c. cider vinegar
2 tbsp. salt

Combine cabbage, apple and salt. Cook onion in oil in large heavy saucepan until soft. Add combined cabbage and apple mixture and simmer slowly, stirring occasionally for 10 minutes. Add sugar and 1/3 of vinegar and water. Steam - covered, for about 1 hour. Add remaining vinegar and water as liquid is absorbed by cabbage.
