FOIL PACKAGED FISH (FOLIOKALA) 
1 whitefish, cleaned, boned, if desired
1 med. carrot, sliced as thin coins
2 scallions, chopped finely
2 tbsp. dill
2 tbsp. butter
2 tbsp. parsley
Salt and pepper to taste
1 lemon
Aluminum foil paper

Preheat oven to 450 degrees. Rub whitefish with salt, if desired. Butter foil and place fish in center. Put 1 tablespoon dill and 1 tablespoon butter inside of fish. Sprinkle carrot, scallion, 1 tablespoon dill, parsley and remaining butter over fish. Place a few thin slices of lemon on top, if desired. Bring up edges of foil and seal into a package. Bake for 20-25 minutes. May be cooked on a grill instead. Serve on a platter with new potatoes and dill.
