FISH IN FOIL 
2 tbsp. butter
2 tbsp. chopped green onion
3 c. sliced mushrooms
2 tbsp. chopped parsley
2 tsp. lemon juice
1/2 tsp. tarragon
4 fish filets

In medium skillet melt butter. Add green onions and saute until tender. Add mushrooms and saute 5 minutes, stirring occasionally. Stir in parsley, lemon juice and tarragon; set aside.

Place one fillet in center of each of four pieces of heavy-duty foil. Spoon mushroom mixture on each. Fold edges of foil together, sealing well. Bake in 400 degree oven for 20 minutes.
