RICE PIE 
3 c. hot cooked rice (not Minute rice)
1 c. sugar
9 eggs
3 tsp. vanilla
1 1/2 tsp. lemon juice
3 lbs. ricotta cheese

Add the sugar to the hot rice. Allow this to cool. With an electric mixer, beat the eggs; stir in the vanilla and lemon juice. Combine with rice mixture. Fold in the ricotta and turn into a greased 9x13 inch pan. Sprinkle with cinnamon and bake at 350 degrees for 60 minutes or until an inserted knife comes out clean.
