BEEFY MEXICAN LASAGNA 
1 lb. ground beef
1 (16 oz.) can tomatoes, cut up
1 pkg. taco seasoning mix
1 can French fried onions
1 (12 oz.) carton cottage cheese
1 1/2 c. shredded Cheddar cheese
2 eggs, beaten
12 flour or corn tortillas
1 tomato, chopped
Shredded lettuce

Brown beef; drain. Add canned tomatoes and taco seasoning mix. Simmer uncovered, 5 minutes. Stir in 1/2 can French fried onions.

In bowl, combine cottage cheese, 1 cup Cheddar cheese and eggs. Place 3 tortillas on bottom of greased 8x12 inch baking dish. Overlap 6 tortillas around sides of dish. Spoon meat mixture evenly over tortillas. Top with 3 tortillas, then with cheese mixture.

Bake, covered at 350 degrees for 45 minutes. Sprinkle with remaining cheese and onion. Bake uncovered 5 minutes longer. Serve with lettuce and tomatoes on top. Serves 6.
